It is a very popular hop to use for hoppy beers like American pale ales, IPA’s, Belgian Style IPA’s and Double IPA’s…

Below are some of the characteristics of this hop variety:

Alpha:Beta Ratio: 1.6
Alpha Acids: 8 – 11%
Beta Acids: 6 – 7%
Cohumulone (% of alpha acids): 21 – 24%

Total Oil: 1.5 – 1.9 (mL of oil per 100 grams)
Myrcene: 68 – 70% of total oils
Humulene: 9 – 11% of total oils

Aside from Cascade hops, Centennial hops are a possible substitution since they share the same citrus and floral characteristics. The difference is that Cascade also has a little spicy character, and Centennial (sometimes referred to as a super Cascade hop) may have a ‘catty’ character closer to Amarillo.
